Mom is the most important and intimate person in my life, even now…no, especially now, when we live on different sides of the globe. She is my inspiration, strength and the best friend. I love you mom, everything I’ve done and achieved is because of you. Your words “You can do anything you want” and “You can be anyone you dream” are always with me. Thank you and happy Mother’s Day!
Here is my mom’s favorite Banana Pancake recipe for super moms all around the world. It is easy, healthy and delicious. My six-year-old niece loves it so much!
- 2 bananas
- 2 eggs
- ½ cup oatmeal
- ½ tsp soda
- a pinch of sea salt
- Splash of vanilla (optional)
- Mix in a blender peeled bananas, eggs, oatmeal, soda and sea salt until smooth. Leave for 10-20 minutes until the batter slightly thickens.
- Cook on medium heat.
- To make small pancakes use 1-2 tablespoons of batter, or put 4-5 tablespoons if you want regular size pancakes.
- Serve with fresh fruit and natural syrup.
You can always get creative and play with shapes as well. Use your waffle maker and serve beautiful waffles instead of pancakes. Mmmmm…we love it!
