It is a really gray and rainy day here in Chicago. Clearly, it is time to add more sun to your life or a least, to your plate). Today I am sharing a very easy and healthy Carrot Cake Bites recipe.
Ingredients (for 10-11 bites)
1/2 cup shredded carrots
1 cup raw cashews
1/4 cup coconut oil
1/4 cup coconut flakes (for rolling)
2 Tsp maple syrup
1/2 tsp cinnamon
1/4 nutmeg
splash of vanilla extract
sprinkle of sea salt
Instructions
Put shredded carrots in blender or food processor and pulse it. Then transfer it to separate bowl. Pulse cashews in blender until large-medium crumbs. Mix carrots, cashews and remain ingredients without coconut flakes in blender again until it well combined. Transfer the dough into a bowl and place in refrigerator for 20 minutes. Roll the dough into a 1-1.5 inch balls and then cover each one in coconut flakes.
Those bites are really easy to make and more important they are made out of great ingredients.
Enjoy Carrot Cake Bites as a fulfilling to-go or not-to-go (haha, sounds almost like Shakespeare) snack or even as a colorful dessert.
