Five Minute Apricot Balls

This is a quick snack that we always seem to come back to. Maybe they look not perfect but they taste wonderful. It is true. The main ingredients are apricots and nuts. We try to vary the taste by adding spices, salt, lemon juice, etc … Add what you love and enjoy!

Five Minute Apricot Balls

(For 12 balls)

Ingredients

1 cup raw pecans (your favorite nuts)

1 cup dried apricots (we use sulfite free apricots)

5 tbsp coconut flakes

1 tsp cinnamon

1 tbsp lemon juice

Pinch of salt

+ 2 tsp cinnamon for sprinkling

Instructions

In a blender or a food processor, pulse nuts and coconut flakes until coarsely blended. Put dried apricots in hot water for a minute, then cut them in a half and pulse in the blender with nuts and coconut. Add cinnamon, lemon juice and salt and blend all together for a few seconds until mixture forms a “dough” and starts to clump together. Then form 12 small round balls with your hands; they should be half the size of a golf ball. Roll the balls in cinnamon. If you do not like cinnamon, use finely chopped almonds, shredded coconut or poppy seeds. After you done, place the balls in the fridge for 20 minutes before serving.
