Raw Strawberry Tart

Summer is time when we are trying to be outside as much as we can. It means this is time for easy recipes too. To be honest in our kitchen it is always time for easy recipes. Just a few ingredients, blender and one bowl or pan.

Today is am sharing a very easy summer recipe of raw strawberry tart. Every time I am cooking it I want to sing “Strawberry Fields forever”… despite the meaning of that song).  Yes, this recipe calls for lots of fresh sweet strawberries. It is the best if you can pick them in your own garden. At the place where I grew up it was my reality – the sweetest and the most fragrant berries were there. Well, now I am going to Whole Foods. Funny enough my experience of getting strawberries at farmers markets was not very successful this summer. I hope you are luckier).

This recipe is not vegetarian, cause I used some gelatin. As a vegetarian or vegan you can always substitute gelatin to a plant version of it.

Raw Strawberry Tart

For 8×8-inch form

Ingredients:

Crust:

1 cup organic pitted dates

1 cup raw pecans

1/3 tsp sea salt

Strawberry filling:

1.5 cup fresh strawberries

2 tbsp organic maple syrup

1 tbsp of unflavored gelatin (for vegan version use Vegan Jel, 1 teaspoon gelatin = 1 1/2 teaspoons Vegan Jel

Some sliced almonds for decoration

Instructions:

To make a crust add pecans, dates, sea salt and run a blender/processor until it all comes together. Flatten it out on the bottom of an square non-stick spring form. Store in the fridge while you make the filling.

Beat gelatin powder into a cup of hot water until dissolved. Let the mixture sit (you better follow the instructions in the box of your gelatin to ensure a good result). Cut all strawberries into quarters, mix them with maple syrup in a bowl. Take the crust out of the freezer and place the berries on it evenly. Pour the gelatin mixture over strawberries,  decorate with some sliced almonds and place your tart in the fridge not a freezer. In about 45-60 minutes the tart will be ready (It might take a little longer).

Next day the crust might get a little softer, but it will still taste great.
