Simple Nuts & Seeds Bread

A simple gluten-free loaf packed with healthy fats, protein, and antioxidants is here! Easily sliceable and packable (pardon my love of creating new words), this bread is the way to go when you need a creative healthy snack solution.

As I’ve mentioned, the beginning of December is the most hectic time for students due to their final projects and exams. I am one of those lucky ones. When I say “lucky” I truly mean it, regardless that this study carnival will continue for at least three more years. Should I join forever students club?)

Okay, let’s talk about the recipe.

As you may notice, all my recipes here are simple and usually not very time-consuming. It is also the way I cook. I try to optimize time in the kitchen. That is one of the reasons why I have never tried to make my own bread. Well, maybe only in a form of gluten-free banana bread.

Today’s recipe I named “bread” but in reality it has nothing to do with the traditional bread with flour, yeast, and other ingredients. My bread-ish creation is an absolutely flavorful, gluten-free bread-like loaf made mostly of seeds and nuts. It is easy-to-make, nutritious, delicious, and 100% satisfying.  

Ingredients:

½ cup raw almonds

½ cup raw pecan pieces

½ cup raw sunflower seeds

½ cup raw pumpkin seeds

¼ chia seeds

¼ flax seeds

¼ cup dried unsweetened cranberries (or goji berries)

1 tbsp poppy seeds (optional)

2 large eggs

Pinch of sea salt

Instructions:

Preheat oven to 420 ℉/ 210 ℃. In a large mixing bowl, add all nuts and seeds. Add the eggs and salt, and mix until well combined. Pour mixture into a small parchment lined loaf pan, and bake for no more than 20-25 minutes. You don’t want to burn your nuts!

Let the loaf cool. Slice thin, and enjoy!

We love eating this bread with a few thin slices of avocado and sea salt or for a sweeter option, with a homemade cranberry and dark cherry jam. Mmm… it is definitely our jam lately).

This “bread” is really fulfilling and nutritious, so one small slice at a time is enough. Nuts are very dense food and it is easy to overdo it. The best way is to listen to your body responses.
