Hi there! I recently tried to be nut-free for a few weeks. What will I say now? I feel much better! I don’t think this experiment will last for years for me, but I am absolutely happy that I had this break. What else I do want to say? Well, It looks like there are not many nut-free desserts on this blog. It is clearly great time to change the situation.
Today I am going to share the recipe of one (I am not afraid to say) perfect nut-free dessert called Chocolate Espresso Bites. It is really easy to make and really nice to have in the fridge 😉
This coffee-chocolaty dessert is flavorful, rich, and packed with super foods. All we need to glow and be happy, right?
Chocolate Espresso Bites
For 12 little bites
Ingredients:
- 10 large organic dates
- 3 tbsp rolled oats
- 2 tbsp oatmeal flour
- 5 tbsp dried shredded coconut, unsweetened
- 1 shot of cold espresso
- 1 tbsp extra virgin coconut oil
- 3 tbsp organic cacao powder
- 1/2 tsp vanilla extract
- 1 tbsp maca powder (optional)
- 1 tbsp organic chia seeds (optional)
- 30-40 g. dark chocolate
Instructions:
Mix all the ingredients beside the oat flour in a blender or food processor for about a minute, then add the oat flour and process again until it forms up like a ball. Remove the sticky “dough” from the blender and place it in the fridge for about 10 minutes.
Then form 12 small round bites with your hands. Put in the fridge again while melting the chocolate on a double boiler / water bath. Pour the melted chocolate over the bites using a spoon. Put then into freezer until cold and firm. Enjoy!
