Eureka moments are happening! Lately, quite often… Sometimes I can create something without knowing how to use it in the beginning. The great idea comes later and it is always worth it ;).
The Beatles proclaimed, “All you need is love”… but today I will say, “All you need is dates”. This creamy recipe calls for lots of dates and good quality cocoa powder. It can be a perfect spread to enjoy with a whole grain cracker or a piece of sour fruit such as a green apple. On a whim, I went ahead and used it for an ice cream base. C’mon, it is still July! Let’s enjoy fresh and easy treats.
To all dates lovers…
Cocoa & Dates Spread
Ingredients:
1.5 cup organic dates
2.5 tbsp organic cocoa powder
0.5 tsp cinnamon
Pinch of sea salt
Instructions:
Soak pitted dates in a hot water for at least an hour.
Take the skin off of dates. Then process them with the rest of ingredients in a blender until it smooth.
Now it is Ice Cream Time!
Coconut Date Ice Cream
Ingredients 2 servings:
4 tbsp of cocoa & date spread (add one spoon of cocoa powder to make it more chocolaty)
10 tbsp full fat coconut milk
pinch of sea salt
a few raspberries
5-6 roasted hazelnuts
To make easy ice cream process the spread with coconut milk and salt in a blender until the creamy texture.
Transfer the mixture into a plastic container and put it into a freezer for an hour.
Then scoop a ball of ice cream to a tiny glass, top it with a few sour berries (blackberries work great) and a few roasted hazelnuts. Yum!
