Decadent Chocolate Truffles ? (Saint Valentine’s Day Special)

Valentine’s Day will come very soon! Are you excited yet? I hope you are!
While people are rushing buy flowers, cards, and tons of chocolate; I decided to make one of my long time dreams come true — make chocolate myself.


I have been a big fan of organic cocoa butter for quite a long time. I love to use it as a moisturizer after a shower. It is incredibly fragrant and very delicate, and well, always makes me want to taste it 😉

Just recently, I have decided to use it in the kitchen. When, as in anticipation of the day of all lovers, devote time to chocolate experiments?

Frankly, home chocolate exceeded all my expectations!


These truffles are exquisite. They are rich, chocolaty, delicate, and so aromatic! They melt in the mouth and makes you feel amazing. They can be an excellent present for any occasion. Who does not like chocolate?

Decadent Cacao Truffels (Saint Valentine's Day Special)

Servings 12 -15

Ingredients
  

  • 4 tbsp raw cacao butter break off small pieces
  • 2 tbsp raw coconut oil
  • 3 tbsp maple syrup or raw honey
  • 1/2 cup organic cacao powder
  • 1 tbsp lemon juice
  • 1 tbsp grated ginger root
  • 1 tsp almond extract

Instructions
 

  • Heat water in a small saucepan, place a heatproof bowl on top. Measure out all ingredients. Melt the cacao butter over a water bath, while stirring.
  • Remove from heat, add coconut oil and sweetner and whisk until well combined.
  • Add cacao powder, lemon juice, ginger, almond extract and whisk until thick and smooth.
  • Let the mixture to cool off then set in the freezer for 7-10 minutes. This part is a little tricky. Try to catch the moment when the mass is not completely frozen but just became solid. Using a spoon, scrape some mass and form 12-15 small round truffles with your hands. Roll the truffles in cacao and/or cinnamon and store in the fridge in a sealed container.

This recipe is not complicated but requires some time and attention. If you are looking for something even more simple, use this recipe as a base for a variety of other chocolate experiments! So, instead of waiting until the mass hardens for truffles, you can pour chocolate liquid over some fresh fruit (or dip pieces of fruit in it, you pick). The best for this are kiwi pieces, circles of bananas, and strawberries.
If you want to get more creative with shapes, try to use silicone molds for chocolate (Just pour liquid chocolate in it and leave in the fridge for an hour, sprinkle it your favorite toppings, mine are chopped nuts, dry fruit, coconut flakes, cacao nibs).
