Easy Nut Truffels

I am absolutely happy, when I hear something like that. I want to cry out loud: Yes! Yes! It is! Let’s turn away from sugary processed stuff and enjoy delicious healthy treats. It is so easy.

Today I am sharing my three favorite raw truffels recipes. It takes from 5 to 15 minutes to make and tastes absolutely delightful. Let’s do this.

I

Chocolate & Coconut Truffels

Ingredients for 14-15 truffels

1 cup organic dates (pitted)

1 cup pecans (almonds, walnuts)

3 tbsp raw organic cocoa powder

2 tbsp organic coconut oil

4 tbsp shredded coconut

1 tbsp chia seeds

extra shredded coconut for rolling in.

Instructions:

Soak pitted dated in hot water for at least 10 minutes.

Meanwhile add the rest of ingredients to a food processor or blender and pulse it.

Add dates to the mixture and blend it all together until the mixture resembles a sticky crumb.

Use your hands to shape the mixture into balls.

Roll the balls in the extra coconut and place in the fridge to set.

Oats & Vanila Truffels

Ingredients for 10-12 truffels

1/2 cup organic oat flour (you can make it by processing rolled oats in a blender)

4 tbsp coconut flour (you can make it by processing shredded coconut in a blender)

2 tbsp raw unsalted almond butter

6 tsp organic maple syrup

1 tsp vanila extract

1/4 tsp sea salt

Instructions:

Mix almond butter, maple syrup and vanila extract in a small sauce pan on medium heat. Stir well. Bring to a boil, then remove from heat.

Add the rest of ingredients and mix it well. Add a little bit more coconut flour or water if necessary.

Make small balls with your hands.

Keep them it the fridge.

Lemon & Cashews Truffels

Ingredients for 12 truffels

1 cup raw cashews

1 cup shredded coconut

1 tsp vanila extract

juice of half a lemon

zest of one large lemon or two small ones

2 tsp maple syrup

pinch of salt

Instructions

Place all ingredients in a food processor or a blender and blend until the mixture resembles a sticky crumb.

Make 12 small balls using your hands. Roll the balls in the extra coconut if you like.

Keep the truffels in the fridge or freezer.

 

Easy and healthy treats are ready. Enjoy!
