PB & Banana Oatmeal

Rainy weekend morning calls for coziness and warm comfort food. On days like these, I like to brew a big pot of herbal tea and make oatmeal with cinnamon.

Some days, green smoothies – are what I need for a productive start of my day, other days call for a nourishing warm porridge with my favorite fruits and cinnamon. It is essential to listen to yourself, to your body. This skill lies at the heart of intuitive eating and healthy relationships with food.

In cold weather, oatmeal gives me a good portion of energy and tunes me up for a good day, regardless of whether there is a preparation for a hard exam ahead or a relaxing day full of fun. I hope everyone is having a second scenario today ;).

I already shared a lot of recipes with rolled oats and oatmeal flour, but strangely enough, I have not yet shared my favorite warm oatmeal recipe. Today is the day! 🙂

PB & Banana Oatmeal Porridge

2 servings

Ingredients:

1 cup (250 ml) of organic rolled oats
2 cups of plant milk (oatmeal, almond, cashew, etc.)
2 organic dates cut into small pieces
2 tbsp. chia seeds
A pinch of sea salt
Cinnamon

Topping

1-2 spoons of peanut butter (or nut/seed butter of choice)
a few circles of organic banana (for a sweeter option) or a few berries
Bee pollen (optional)

Preparation:

In a small pan, bring the milk to a boil. Then stir in the rolled oats. Reduce heat, add chia seeds and cook for 4-6 minutes, stirring occasionally.

When most of the milk is absorbed, the porridge is almost ready. Add a pinch of salt and cinnamon to taste. Turn off heat. Cover the pan with a lid. Let the porridge sit for a minute.

Serve in small bowls, add banana, nut butter, and bee pollen.

Breakfast is ready! Enjoy!

Note

If you wish to use coconut milk, it is better to start cooking the porridge using water and add the milk at the very end, when the oatmeal is almost ready. Accordingly, less milk will be needed.

Oatmeal porridge can have many different variations and does not have to be only a breakfast option 😉

Here are a few ideas:

Oatmeal + 1/4 of avocado + soft-boiled egg + salt, pepper

Oatmeal + a few pieces of orange + hemp seeds + drizzle of raw honey

Oatmeal + sauteed apples with cinnamon and prunes + pumpkin seeds
