With the advent of spring, I am craving more colors! It is time to share one delicious and beloved recipe. It is a soothing drink made from nut milk, which I call latte, mostly for the creamy texture, even though is not related to coffee (Little spoiler, it can be).
Now about the color and secret ingredient… An organic beet powder gives a pleasant pink tone to it as well as makes it super nutritious. It is rich in vitamin A, B6, magnesium, iron, and many other vital microelements. It is also very favorable for the heart and stabilizing blood pressure. There are no other ingredients besides organic beets, so it is incredibly wholesome.
Despite the fact that it is pretty concentrated, you almost can not taste it when you add it to smoothies, nut milk or dough while the pink color appears immediately. It is especially great if juices, soups or salads with beets are not your favorite food.
I’ve been successfully experimenting with this magical beetroot powder for a while, and now I am honestly admitting that I like it a lot so far.
Pink Latte!
Ingredients
- 1 cup of unsweetened cashew milk
- 1 tsp beetroot powder
- 1-2 dates optional
- 1 tsp vanilla extract
- 1 tsp sunflower butter or almond butter
- ½ tsp cinnamon
Instructions
- Process all ingredients (except cinnamon) in a blender until smooth. Transfer the mixture to a small pan and heat until boiling. Transfer to your favorite mug, sprinkle some cinnamon. Enjoy!
To make this drink a latte just add an espresso shot to it and enjoy it in the first part of the day. It can be an excellent light snack, at that time when you need a light energy boost; it might even fit in your dessert category ;).
