Got a few ripe avocados? Want to have some fun in the kitchen? Let’s make Guacamole! It is fast, delicious, and simply perfect for any occasion!
Let me confess that avocados and I are having such a special bond for a few years already. In Siberia, they were way more exotic than here, in the US, so I have never tried them in Russia. Now knowing that a ripe avocado is somewhere around always makes me a little happier). I love adding them into my salads. I do it almost every day. Sometimes I cut a piece in small chunks and simply stir into a salad, another day I might enjoy avocado as a part of a delicious dressing (mashed ¼ of avocado + 1 tbsp of tahini + lemon juice = mmm…favorite!)
Making guacamole always seems like a great idea when we are hosting a little get together and I want to offer something a bit more fun. Serving freshly made guacamole with some whole wheat chips always is a crowd-pleasing snack (a fruit tray with homemade spicy nuts is always popular as well.) A little bonus — guacamole takes almost no time to make! Yay!
There are many reasons to like guacamole. It is obviously delicious, easy-to-make, and yes, it is healthy. Practicing portion control is always a good idea even with the healthiest foods.
With regard to the nutrition content, avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They provide lutein, beta-carotene, and omega-3 fatty acids.
Avocados are full of healthy fat which is essential for every cell in our bodies, plus, fat helps to keep you full and satiated. Eating fat slows the breakdown of carbohydrates, which helps to keep sugar levels in the blood stable, supports skin health, enhances the absorption of fat-soluble vitamins, minerals, and other nutrients, and may even help boost the immune system (1).

Simple Guacamole
Ingredients
- 2 ripe avocados diced and mashed
- 1/4 cup red onion diced
- 1 jalapeno pepper diced
- 2 large garlic cloves diced
- 1/4 cup fresh cilantro diced
- 1/3 cup cherry tomatoes diced
- juice of 1 lime
- 1 teaspoon ground cumin
- 1 teaspoon sea salt add more if needed
- fresh ground black pepper
- Pinch of cayenne
Instructions
- Cut and mash avocados first. Combine all ingredients (previously diced) into a large mixing bowl. Stir in all the ingredients until your desired consistency is achieved. Add more salt and pepper.
- Store in the fridge in an airtight glass container.
