Almond Butter Brownies (gluten-free)

These brownies are gluten-free, delicious, and simple to make with nutrient dense almond butter. While they are almost not sweet, they are flavorful, rich, and really dark chocolaty.

Ingredients
  

1⁄2 cup crunchy almond butter

2 large organic eggs, preferably pastured

1 tbsp coconut sugar (1 tbsp is for unsweetened version, for sweetened version use up to 3-4 tbsp)

1 tsp vanilla extract

1⁄4 tsp sea salt

1⁄4 tsp baking soda

2 tbsp unsweetened cocoa powder

Instructions
 

1. In a large bowl, with a hand blender or fork, mix almond butter until creamy

    2. Mix in eggs, coconut sugar, vanilla

      3. Add salt, baking soda and cocoa powder

        4. Mix well until all ingredients are well combined

          5. Transfer batter into 6 muffin tins lined with paper cups or greased with coconut oil

            6. Bake at 350° for 12 to 15 minutes

              7. Serve with your favorite yogurt and fresh berries. Bon appetite!

                Notes

                1 tbsp of coconut sugar will yield the unsweetened version of muffins.
                To make them lightly sweet, add about 3 tbsp (or more) of coconut sugar.
