Quick, portable, and easy-to-make snack. These bites are perfect for everyone, especially for active students, moms or anyone who is sometimes short on time but still wants to have a healthy snack.
Everyone has those days when a quick energy boost in the middle of a day is needed, and I am no exception. Whether my morning work out was a bit more intense, or preparation for exam took all my energy, or maybe I simply want something sweet (let’s be honest it occasionally happens), I prefer to be prepared for these moments. So, I usually roll these tiny bites during my meal prep and voila! I feel ready for about anything my life can bring). I posted a few other energy bite ideas here, here, and here.
Wholesome ingredients make these tiny balls not only healthy but really tasty as well. A little addition of coffee (even for a caffeine sensitive person like me) does not create an unhealthy buzz but gives a gentle push to finish whatever I am currently working on. And yes, dates…They need to be big and soft. I get my perfect ones from imperfect produce. Check it out if you are in Chicago and support local farmers.
Coffee Chocolate Energy Bites
Ingredients
- 1-2 of these bites are the perfect serving.
- 1 cup pecans
- 6 big dates pitted (my favorite dates are from imperfect produce)
- 2 tsp organic coffee finely ground
- 1 tsp maca powder
- 1 tsp cinnamon
- 2 tbsp cacao powder
- 2 tbsp coconut flakes
- Pinch of sea salt
- Use more maca cinnamon or cacao powder for coating.
Instructions
- Place everything in a blender and process for a few seconds until the sticky mass is formed. Make about 12 tiny balls. Keep in the fridge or freezer.
These bites work best as a pre-workout, mid-morning or afternoon snack, it all depends on the schedule and activity level. Enjoy and let me know what you think about this recipe!
